The Vogadori brothers produce the classical wines of this area as Valpolicella Classico, Recioto della Valpolicella Classico, Amarone della Valpolicella Classico and Ripasso. In addition there are Passito Bianco, Bianco dei Leoni and Raffaello wines. Valpolicella Classica lies in the north east of Verona city, it is the area where wine production is more rooted and it is formed by five villages: Negrar, S.Pietro Incariano, Marano, Fumane and Sant'Ambrogio of Valpolicella. Amarone Classico, Recioto Classico, Ripasso classico and Valpolicella Classico have been made with four main red grapes: Corvina, Corvinone, Molinara, Rondinella and Oseleta. The selection of the best grapes for the Recioto and the Amarone, happens still manually and, respecting the tradition, in wooden plateaux. Grapes are kept for 3-4 months in special rooms at a monitored temperature and dampness. The grapes loose from 30% to 40% of their weight during the drying (due to the evaporation of the water contained in them) with notably increases of the sugar content. This increase in sugar will ferment and will allow the Amarone wine to reach at least 15 alcohol degrees and to have a high content of extracts and poliphenols.
